What Really Happens to Wine Under the Sea? Science, Myth and Reality

What Really Happens to Wine Beneath the Sea? Science, Myth and Reality

Conditions no cellar can replicate

Underwater aging transforms those very conditions.

At the bottom of the wild Cantabrian Sea:

  • pressure changes and rises significantly
  • temperature remains stable, with only slight fluctuations throughout the year
  • light disappears completely
  • subtle movement affects the wine over time

Does it really change the wine?

That is the key question.

Some observed effects include:

  • more youthful colour
  • powerful and unexpected aromas
  • wines with more glycerol
  • softness
  • balanced acidity
  • surprising evolution...

But perhaps the most interesting aspect is the increased variability. Each batch can develop its own personality.

Between science and perception

Some aspects of the underwater wine phenomenon can be measured, and Crusoe Treasure has been studying them with independent laboratories for years.

But another part is experiential.

Context matters:

  • tasting an Crusoe Treasure underwater wine alongside its “land” counterpart.
  • visiting the place where it happened
  • understanding the process

All of this shapes perception.

And perception is never secondary when it comes to wine.

A new frontier in winemaking

The world of wine has always evolved through experimentation.

Underwater aging may not replace traditional methods.

But it opens a new path. Crusoe Treasure began studying the process before 2007, when it created the wine brand, guided by the principles of the renowned wine expert Dr Antonio Palacios.

One that brings together science, the environment, and curiosity.

Not only for what it does to the wine, but also for what it represents.
