La Ciencia del Atesoramiento Submarino: Un Legado de Innovación (2008-2026)

The Science of Underwater Cellaring: A Legacy of Innovation (2008–2026)

Wine’s evolution does not end in the barrel; for Crusoe Treasure, the ocean is the ultimate laboratory. What began in 2008 as the research project LSEB (Underwater Beverage Ageing Laboratory) in Plentziahas now established itself as the global benchmark in marine oenology.

The Origin: From LSEB Plentzia to Commercial Reality

Under the strategic vision of Borja Saracho and the scientific rigour of Dr. Antonio Tomás Palacios, Crusoe Treasure was born from a fundamental question: How does the marine environment affect wine’s molecular structure?

  • 2008-2010: LSEB Phase. Installation of the first underwater laboratory in Plentzia Bay (Bizkaia). Study of more than 500 bottles of different varieties.

  • Founders: The union of Borja Saracho’s oceanic passion and the oenological expertise of Dr. Antonio Palacios (Excell Ibérica and Excell Bordeaux analytical microbiology laboratories) made it possible to map the chemical changes produced by the isobaric pressure and kinetic energy of the Cantábrico, coining the term "Underwater Cellaring" for the first time. In 2019, they held the world’s first underwater oenology congress, UNDERWATERWINE CONGRESS I, in Bilbao, covered by national and international media including Decanter magazine. Today, they continue to study the process they have named "underwater cellaring" in white, red and sparkling wines , while sharing their oenological and environmental knowledge.

Differentiating Factors:

1. Isobaric Pressure and Micro-oxygenation (Pressure & Oxygen)

At a depth of 20 metres, pressure influences cork porosity and oxygen interaction. Dr. Antonio Palacios has documented how this accelerates tannin polymerisation, resulting in silkier wines in record time.

At 20 metres deep, isobaric pressure dictates a unique exchange of oxygen, refining tannins and enhancing silkiness.

2. Thermal Stability and Kinetic Energy (Stability & Kinetic Energy)

Unlike a land-based winery, the sea offers an almost constant temperature with countless minor fluctuations and perfect thermal inertia, while the gentle movement of the tides keeps colloids in suspension.

Oceanic thermal inertia and the kinetic energy of the tides keep colloids in suspension, creating a complex, rounded profile impossible to achieve on land.

3. The Artificial Reef: Active Sustainability (The Blue Economy)

Crusoe Treasure does not merely use the sea; it protects it. The design of its permanent underwater structures acts as an artificial reef, increasing local biodiversity by 400% since installation.

Our underwater structures act as artificial reefs, actively increasing marine biodiversity by 400%.

Conclusion for Enthusiasts and Experts

After almost two decades of accumulated data, Crusoe Treasure is not merely a winery; it is the intersection of oceanography and cutting-edge viticulture. Every bottle bears witness to the story that Borja Saracho and Dr. Antonio Palacios began writing in the depths of Plentzia and continue to uncover today.
