The life of our wines after leaving the sea

Do you want to discover how our underwater wines are preserved?

As a wine lover, or as a consumer of new and different experiences, you may have some of our underwater wines in your collection and have wondered how preserve it without losing all its authenticity . You may have wondered if you should follow the same conservation guidelines for a wine aged only on land so that it maintains all its flavour, aroma and colour or if the life of underwater wine really changes completely when it leaves the sea. To resolve all your doubts, we will tell you in this post:

  • Location : You should look for the ideal place to store your wines. The best thing would be to keep them in a wine fridge, at a constant temperature and with very little light. If you do not have such a place in your home, the best option would be to keep them in a climate-controlled cupboard or, failing that, in a dark cupboard located in a cool corner of the house, such as in a basement or on the ground floor. However, you should keep in mind that the kitchen is usually one of the worst places to keep them due to its vibrations, noise and changes in heat, so it is the least suitable place.
  • The temperature: The temperature should be as constant as possible. We recommend keeping white wines at 12ºC and red wines at 15ºC.
  • Humidity: As with temperature, it is equally important to monitor the relative humidity of the environment, since relatively low humidity can cause the cork to dry out and deteriorate, allowing air to enter the bottle. Our recommendation is to maintain relative humidity between 65% and 75%.
  • Light : Wines should preferably be stored in a dark place so as not to accelerate their degradation when exposed to direct light. This applies to both natural and artificial light.

  • Bottle position: Bottles should be stored horizontally. This will allow the wine and cork to be in constant contact. It is advisable not to move the bottle of wine once it has been stored. We should avoid shaking or sudden movements to allow the wine to rest and develop in the most natural way possible.
  • Life of our wines: Today, the analytics that are carried out Antonio T. Palacios indicates that under these conditions, red wines can last up to 10 years without problems and white wines between 5 and 7 years. Beyond that time, it will depend on each wine and how we have preserved that bottle. Our recommendation is that the wines are excellent for consumption today, but if you want you can keep them for 5 or even 10 years and the wine will improve naturally.
  • And once the wine is opened? : Once we have opened a bottle of wine, if we are not going to finish it in one go, if it is white wine we can store it in the refrigerator. Before, we must minimize the contact between the wine and the air contained in the bottle to avoid oxidation, we achieve this with a vacuum pump. In the case of red wine, we must store the bottle in a cool place, without cork, for a maximum of two days. But you will be surprised to see that our wines, once the cork is removed and in a cool place, opened, even two days after having been opened, improve even more... check it out ;).

Generally speaking, preserving one of our underwater wines is not very different from preserving a wine aged on land, which makes it easier to consume.
