The History has linked the sea and wine for thousands of years . Since the earliest voyages, sailors carried food for sustenance and merchandise for trade on their ships. Many of these foods were transported in amphorae and all kinds of containers . Wheat, grain, and all kinds of spices later gave way to the oil and wine trade. This has been a constant reality throughout history, and thousands of ships have ended their days at the bottom of the ocean. The recovery of these submerged wines has led to all kinds of speculation about their evolution and their oenological, economic, and historical value.
Underwater hoarding
Underwater treasure is the definition of the process of making wines and other alcoholic beverages created and designed by Bodega Crusoe Treasure, which has been carried out for years, born from the studies of LSEB Plentzia . A process, born and improved after years of research , in which we have learned how designing the wine on land , controlling a specific series of parameters, among other factors, to subsequently achieve the maximum evolutionary expression Under the sea. Underwater storage has a father and a leading figure in the world of oenology: the renowned oenologist and Doctor of Oenology Antonio T. Palacios, Crusoe Treasure's winemaker since its founding.
The differentiating factors of our underwater storage process, in its marine phase, are:
– Temperature . Our wines are subject to small, continuous temperature fluctuations. Temperatures never exceed 19°C or fall below 12°C. The Cantabrian Sea and the Bay of Plentzia – Gorliz, where we are located, are ideal for this process.
– Pressure . The wines are subjected to a pressure of 3 bars (3 atm). Over time, the pressure inside the bottle changes between the inside and outside. This causes the partial pressure of oxygen inside the bottle to change, becoming higher inside than outside (yes, incredible, but true). The tides and the moon play a fundamental role, naturally and continuously modifying the pressure on Crusoe Treasure wine bottles. This, combined with the lower gravity, gives rise to our unique process.
– Movement . Subjected to the constant swaying of currents, tides, and waves, our wines never rest; they rock and evolve to the constant rhythm of the currents, tides, and storms of the Cantabrian Sea.
– Less gravity . Being underwater reduces the weight of any object. The same goes for liquids; they weigh less. This, combined with the constant swaying of the Cantabrian Sea (strong tides every six hours, continuous waves, and storms in winter), changes the structure of the wine for the better, according to our winemakers.
– Tides . Every six hours the sea rises or falls in our winery-artificial reef up to 4 meters high, uninterrupted, 24/7. We can speak of the most extreme biodynamics to date, with constant changes in light, movement, pressure, and temperature produced by nature itself without any human intervention.
