Storing wine properly is the key to enjoying it for much longer. Wine has a life cycle: it is born, grows, reaches its peak, and dies. The secret is to give it time and taste it at its peak, which obviously isn't the same for everyone.
The “life” of our wines

The question about the "life" of our Crusoe Treasure wines once extracted from the sea is quite frequent: a few days ago, we received another message from Mexico, in this case from Diego Aleman, a professional in the Duty Free sector . His relationship with Bodega Crusoe Treasure began more than 10 years ago at the Miami Duty Free fair. Diego bought two bottles of Crusoe Treasure Passion 2011 , the second wine we have produced since we began this adventure. Instead of tasting the wine after purchasing it, he decided to store it for 10 years , until a few days ago, when he decided it was time to open the bottle.

Diego prepared a wine tasting at home for this special occasion, with two good friends and an influential sommelier, so everyone could try the wine. He suggested pairing the wine with meatloaf with pumpkin blossom, carrot, parsley, and spices. He decanted the wine 45 minutes before the tasting. Once the wait was over, it was time to taste it. Diego relayed the tasting and the opinion of his friend and sommelier, Bibiana Parra , “ Right off the bat, you can see the aging in the color, a good oceanic layer that gives it quite a bit of color, quite perfect on the eye. The aroma is like a jamaican sweet with a mix of nuts, and an addition of balsamic and spices .” After tasting the wine, “ There are tons of spices… wow! It's round, even in the mouth, the flavor doesn't drift to any one specific spot. Wonderful, congratulations!”
This tasting of such a unique wine, which has spent 10 years waiting to be tasted after being extracted from the sea, which took place on the other side of the ocean, is a clear example of the long life that our underwater storage process gives to wines . Our wines evolve differently, reaching their maximum evolutionary expression, and despite the years of aging, they remain in constant evolution on a path in our underwater cellar.
Currently we no longer have units of this reference but we do have its descendant, the Sea Passion No. 2.

Our winemaker, Antonio T. Palacios , already stated that red wines can easily age for up to 10 years once extracted from the sea, while white wines can age for between 5 and 7 years.
Beyond that time, it will depend on each wine and how we have stored that bottle in our home.
For the entire Crusoe Treasure team, it has been a pleasure to see how our wine, after 10 years away from sea, continues to evolve for the better, achieving its maximum maturation expression .
