Zierbena - Cantabrian Sea - 27 metres deep

Crusoe Treasure presents its Zierbena underwater winery

Crusoe Treasure Winery expands its pioneering project with a second artificial reef–underwater winery.

It is located in Zierbena at a depth of 27 metres, a place where wine—and sparkling wine in particular—evolves in a unique way beneath the sea.

ZIERBENA REEF–WINERY

At a depth of 27 metres, off the coast of Zierbena (Bilbao-Bizkaia), lies the new underwater winery of Crusoe Treasure: a unique installation made up of 14 concrete and steel structures which, in addition to housing wine, form an artificial reefthat helps regenerate marine life in the surrounding area, becoming part of the marine ecosystem.

It is an infrastructure designed specifically for the underwater ageing of wine, the result of years of experience, research and technical expertise in underwater construction and the evolution of wine beneath the sea.

The underwater structures in Zierbena have been designed to fulfil a dual function:

  • Create an artificial reef, promoting marine biodiversity and
  • House wine cages under stable conditions of pressure, temperature and darkness, with the sea’s natural movement.

The result is an environment that is stable yet dynamic, where the wine ages in constant interaction with the ocean
Cantabrian Sea.

WHY UNDER THE SEA

A different kind of evolution. Impossible to replicate on land

Under the sea, wine does not age: it evolves in a different way.

In Zierbena, the bottles are continuously exposed to:

  • Constant pressure
  • Total darkness
  • Stable temperature
  • Gentle movement of the sea
  • Natural micro-vibrations

These conditions create a different sensory evolution, particularly interesting in base wines and sparkling wines:

greater integration, finesse, complexity and a unique expression that does not occur when ageing on land.

SPARKLING WINES: THE HEART OF THE PROJECT

Zierbena: a winery designed for underwater sparkling wine

The underwater facility in Zierbena will be dedicated primarily to the creation and evolution of sparkling wines.

The underwater environment is particularly well suited to:

  • Secondary fermentation
  • Ageing on the lees
  • Extended refinement under natural pressure

Here, a new generation of sparkling wines is born, shaped by the Cantabrian Sea and by a radically different winemaking approach.
