Wine is savoured with all the senses

This morning, after rereading the notes from a presentation entitled “Cata sin sentido” in which our winemaker, Antonio T. Palacios, took part, I was reminded of a masterclass I had the pleasure of attending. Antonio spoke to us about the importance of our state of mind and surroundings when tasting, and of what our senses convey.

In a world where the experience of wine goes beyond the simple act of drinking, talks and classes on this subject remind us of the importance of engaging all our senses to fully appreciate this age-old beverage.

At the presentation given by Antonio T. Palacios, alongside other leading figures from the sector, including Josep de Haro, David Molina and Josep Roca, they explained how every sense, from sight to hearing, plays a crucial role in our perception and enjoyment of wine.

Sight: The wine’s colour and clarity offer clues to its age and quality.

Smell: The wine’s complex aromas prepare the palate for what is to come.

Taste: Flavour is, of course, central, but it is influenced by the other senses.

Touch: The wine’s texture in the mouth, its body and astringency, add another layer to the experience.

Hearing: The soundscape can influence our perception of wine; the right music can enhance certain nuances.

To all these perceptions, I would add those arising from our state of mind and surroundings, which have a significant impact on tasting.

Antonio, for example, told us that when he tastes our underwater wines, he feels the sea if he closes his eyes—the relaxation of the moment, the silence of the surroundings. For him, these are all positive memories that make tasting the same wine again a pleasurable experience.

Likewise, if a wine is tasted on a day when one is in a bad mood and finds the surroundings unpleasant, the tasting will probably not be to one’s liking. When tasting that same wine again, the brain may take one back to that moment, and the experience may once again be disappointing.

Over time, we discovered that countless factors influence the tasting of wine, and that wine can be enjoyed in many different ways.

At Crusoe Treasure, we share this multisensory vision of wine. Our underwater ageing process not only gives the wine unique characteristics, but also invites a complete sensory experience. The marine environment influences the wine in ways we are still discovering, and each bottle tells a story best appreciated with all the senses alert.

Events, talks, masterclasses and articles of this kind are essential for educating and inspiring wine lovers about the wealth of experiences this beverage offers. They inspire us to continue exploring and offering wines that are not merely drunk, but lived.
